Our No. 72 Anji Bai Cha is a stunning example of a rare Chinese green tea. This exceptional Anji Bai Cha offers a very clean and light liquor with a hint of pale greenish colour, accompanied by the most refreshingly delicate and soothing cup. It imparts a complex flavour with mellow with lovely mild citrus notes, a silky mouthfeel and a lingering subtle sweet finish.

Grown in the Anji County in the Zhejiang Province, China, where the tea gets its name, our Anji Bai Cha is sourced from tea farms owned by the Chen family, who have been producing specialty tea for generations. Harvested at the end of March 2025 during a very short harvesting period of 3 weeks, the thin, long tender buds are carefully handpicked and pan-dried. The processing involved is minimal, similar to how white teas are made; which is where the tea gets its name 'bai cha' meaning 'white tea'.

While ancient tea-processing techniques are used to make this delicate brew, the Bai Ye Yi Hao tea cultivar itself was created in the 1980s, from a selection of no more than fifty tea plants. As such, this infusion truly embodies the rich tradition of Chinese tea and combines it with the innovation of modern tea-making.

Zhejiang, China

In Eastern China, Zhejiang Province is defined by the picturesque West Lake in Hangzhou, surrounded by mountains that enrich the lake with runoff, creating a fertile environment for tea cultivation. This region enjoys a humid subtropical climate with strong seasonality, influencing the famous Long Jing or Dragon Well tea production. Summers here are short but intensely hot, with temperatures ranging from 22°C to 34°C, creating conditions that are ideal for tea bushes to flourish.

The consistent cloud cover and high humidity, ranging up to 99%, contribute to the unique quality of the tea, enhancing its flavour profile. As autumn approaches, the climate cools, reducing precipitation until winter, which sees the least rainfall and temperatures between 5°C and 8°C. Spring revives the warmth, bringing more rain, fostering lush growth around the lake, celebrated for its blooming lotuses in June. The shores boast a diverse array of plant species, including protected ones like wild soybean and short-spike bamboo, making Zhejiangabotanical haven and a UNESCO World Heritage Site noted for its garden design and rich tea heritage.
